cheesy creamed corn

This sounds so good to me!
I think I have had it once or twice at a potluck dinner.
I may try it out this weekend!

  • 3 packages (16 ounces each) frozen corn
  • 2 packages (one 8 ounces, one 3 ounces) cream cheese, cubed
  • 1/4 cup butter, cubed
  • 3 tablespoons water
  • 3 tablespoons milk
  • 2 tablespoons sugar
  • 6 slices process American cheese, cut into small pieces

~

In a 3-qt. slow cooker, combine all the ingredients. Cover and cook on low for 4 hours or until heated through and the cheese is melted. Stir well before serving. Yield: 12 servings.

enchilada casserole

I love the recipe included with this for homemade enchilada sauce. I don't know how many times I have wanted to make enchiladas and had everything on hand except the sauce. This is such an easy way to make the sauce. It tastes better than the canned stuff too. You should give this recipe a try, it's delicious!

first make a batch of enchilada sauce...

1 can 8 oz. tomato sauce
3 cans water
2 T. taco seasonings
2 T. corn starch
Stir and bring to a boil, cook about 5 minutes to thicken...

1 lb. hamburger
1/2 chopped onion (or dried onion flakes)
1 clove garlic, pressed
4 c. pinto beans (or black beans)
1 can sliced olives
1 can diced green chilis
1 package taco seasoning
1/3 c. water
flour tortillas (or corn)
shredded cheddar cheese

Cook hamburger meat add everything but tortillas and cheese...
spray inside of crockpot with non stick spray. Lay three tortillas in bottom, pour ench. sauce, then meat mixture, then cheese, then add another layer of tortillas, sauce, meat & cheese add remaining sauce over the top. Serve with tortilla chips and sour cream.

crockpot artichoke, chicken & olives ~ slow cooker thursday!

This recipe has some of my favorite things, artichokes, olives and chicken. . . it makes such a nice meal. You can use fresh artichokes too if you want to and if they are available. I didn't really find the need to use the cooking tapioca. You should give this one a try!

1 1/2 lbs skinless, boneless chicken breast halves and/or thighs
2 c sliced fresh mushrooms
1 (14.5 oz) can diced tomatoes
1 (8 or 9 oz) pkg frozen artichokes
1 c chicken broth
1 med onion, chopped
1/2 c sliced pitted ripe olives (or 1/4 cup capers, drained)
1/4 c dry white wine or chicken broth
3 tbsp quick cooking tapioca
2-3 tsp curry powder
3/4 tsp dried thyme, crushed
1/4 tsp salt
1/4 tsp pepper
4 c hot cooked rice

Rinse chicken & set aside. In a 3 1/2 qt crock pot combine mushrooms, undrained tomatoes, frozen artichoke hearts, chicken broth, onion, olives, & wine/broth. Stir in tapioca, curry powder, thyme, salt, & pepper. Add chicken. Spoon some of the tomato mixture over chicken. Cover & cook on LOW for 7 to 8 hours or on HIGH for 3 1/2 to 4 hours. Serve with hot cooked rice. Serves 6.
